Matcha Thumbprint Cookies

𝗠𝗮𝘁𝗰𝗵𝗮 𝗧𝗵𝘂𝗺𝗯𝗽𝗿𝗶𝗻𝘁 𝗖𝗼𝗼𝗸𝗶𝗲𝘀 Recipe (𝗥𝗮𝘀𝗽𝗯𝗲𝗿𝗿𝘆 𝗙𝗶𝗹𝗹𝗶𝗻𝗴)
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
- 1 cup all-purpose flour
- 1 Tbsp matcha powder
- ½ cup unsalted butter, softened
- ½ cup powdered sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- Strawberry jam (will vary, approximately 1/2 tsp+ for each cookie)
𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀:
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- Dry ingredients - Whisk together flour and matcha. Set aside.
- Using an electric hand mixer or a stand mixer, beat butter until pale and creamy.
- Add powdered sugar and mix until smooth.
- Add wet ingredients (egg yolk and vanilla) and mix until combined.
- Add dry ingredients (matcha and flour)
- Mix on low just until dough forms.
- Scoop approx 1½ Tbsp dough, roll into balls, and place on baking sheet (1½" apart).
- Gently flatten and then press a thumbprint or heart shape into each cookie (an index finger works well)
- Add jam to each center and spread gently.
- Bake 11-12 minutes, until cookies look dry and slightly puffy.

Using high-quality matcha matters: Look for bright green, not dull or brown.
Room temp butter + yolk = soft, cohesive dough.
Jam tip: Warm jam 10–15 seconds if too thick.

Airtight at room temp: up to 3 days
Freezer: up to 1 month (thaw at room temp)
